Warm, spicy, and well-rounded: earthy cumin , aromatic coriander , sunny turmeric , plus fennel for balance. Black pepper and chili provide a pleasant heat. Clove , cardamom , and cinnamon add depth – asafoetida brings the typical dal character.
Perfect for dal, chickpeas, vegetable curries, rice dishes and anywhere you want to taste like authentic Indian cuisine.
Application & Preparation1) Toasting: Briefly toast 1–2 tsp of masala in 1–2 tbsp of ghee or oil (10–20 sec.) until fragrant.
2) Build up the base: add finely chopped ginger and sauté briefly.
3) Refine the dal: Mix in cooked lentils or chickpeas, add some cooking water or tomato and let it simmer until creamy.
4) Season to taste: salt and lemon/lime – done.
Tip: For more depth, add a small dollop of ghee at the end; for freshness, lemon juice; and for "restaurant vibes," roasted onions or fresh herbs.
