Fruity-spicy, lightly sweet and digestion-promoting – an Ayurvedic side chutney for rice, dal & more. This harmonious chutney combines sweet dates with spicy tomatoes and authentic Indian spices to create an Agni-promoting accompaniment.
Ingredients (for about 4–6 servings)
Base:
4 ripe tomatoes
6 soft dates (pitted)
1 small red onion
1 tsp grated fresh ginger
1 tbsp ghee or sesame oil
Spices:
1 tsp black mustard seeds
1 tsp cumin seeds
8–10 curry leaves (fresh or dried)
½ tsp turmeric powder
¼ tsp asafoetida (hing) – optional, for better digestibility
½ tsp rock salt or to taste
1 squeeze lime juice
Instructions (Active: 10 min | Cooking time: 15 min)
Preparation: Roughly dice tomatoes, cut dates into small pieces. Finely chop onion, grate ginger.
Spiced Oil (Tempering): Heat ghee or oil in a pan. Toast mustard seeds and cumin in it until they pop. Add curry leaves, asafoetida and turmeric, stir briefly.
Sauté vegetables: Add onion and ginger, sauté until translucent. Then stir in tomatoes and dates.
Simmer: Simmer everything gently over medium heat for about 10–15 minutes until the tomatoes break down and a chutney-like consistency forms.
Season: Season with salt and a squeeze of lime juice. Blend finely if desired – or leave chunky.
Serve: Enjoy warm or at room temperature – ideal with dal, kitchari, rice or flatbread.

Best time of day: At midday – ideal with cooked grains or legumes.
Constitution: Vata: balancing through the sweetness of dates and warming spices. Pitta: well tolerated if less ginger is used and no lime juice is added. Kapha: more heat possible (e.g. some fresh chili), fewer dates.
