    Aromatischer Dill-Zitronen-Reis

    Aromatic Dill-Lemon Rice

    A light, aromatic rice dish with fresh lemon and delicate dill – ideal as a side dish or main course on warm days. Cooling, aids digestion and full of flavor.

    Ingredients (for 4 servings)

    Base:

    2 cups basmati rice
    5 cups water
    1 tsp ghee

    Spices & Aroma:

    3 cloves
    1 tsp turmeric
    ½ tsp cumin
    1 juice and zest of an untreated lemon
    1 bunch fresh dill

    To Taste:

    as needed salt

    Preparation (about 30 minutes)

    Toast spices: Heat ghee in a pot, toast cloves until fragrant. Then add turmeric and cumin and toast briefly together.
    Prepare rice: Add basmati rice and stir until translucent.
    Cook: Pour in water, add salt and stir in lemon juice. Cover and simmer until water is completely absorbed. Then finish cooking over steam (e.g. in a steamer insert).
    Serve: Finely chop dill, zest lemon and fold both gently into the rice just before serving.
    Tip: Perfect as a side dish to dal, kitchari or Ayurvedic vegetable curries.

    Ayurveda Tips:

    Best Time of Day: Ideal at midday when digestive fire is strong.

    Constitution: Especially suitable for Pitta – cooling, light yet flavorful. Kapha types can add extra black pepper powder or ginger.

    Variation: For a more protein-rich version, mung dal can be mixed in.
