    Sweet Potato Coconut Dal with Curry Leaves

    Warming, grounding & soothing for body & mind – a Vata- & Pitta-balancing comfort dish. This creamy Dal combines sweet potatoes with aromatic spices and nourishing coconut milk into a perfect Ayurvedic comfort food.

    Ingredients (for 4 servings)

    Dal Base:

    200 g red lentils
    1 medium sweet potato
    400 ml coconut milk
    500 ml water
    1 tsp salt

    Spice Tempering:

    1 tbsp ghee or coconut oil
    1 tsp black mustard seeds
    1 tsp cumin seeds
    1 tsp turmeric powder
    1 tsp fresh grated ginger
    1 small onion, finely chopped
    8–10 fresh curry leaves (or dried, if not available)
    1 pinch asafetida (Hing) – optional, but Ayurvedically valuable

    For Finishing:

    as needed Fresh lime juice
    as needed Fresh cilantro, roughly chopped (for garnish)

    Preparation (Active: 15 min | Passive: 20 min)

    Prepare lentils: Rinse red lentils thoroughly. Peel the sweet potato and cut into small cubes.
    Cook Dal: Bring lentils with sweet potato, water, salt and coconut milk to a boil in a pot. Simmer for about 20 minutes over medium heat until everything is soft. Stir occasionally.
    Prepare tempering: Heat ghee or coconut oil in a small pan. Toast mustard and cumin seeds until they pop. Add onion, ginger, curry leaves and optionally asafetida and toast until lightly golden. Finally stir in turmeric.
    Combine: Gently stir the tempering into the finished Dal. Mix well and season with fresh lime juice to taste.
    Serve: Garnish with fresh cilantro. Pairs well with basmati rice or warm spelt flatbread.

    Ayurveda Tips:

    Best time of day: Lunch or evening – nourishing without being heavy.

    Constitution: Ideal for Vata types – balancing through sweet potato, coconut and warming spices. Pitta: cooling coconut milk softens the heat. For Kapha: can be adjusted with less coconut milk and a bit of chili.

    Note: The combination of sweet potato & coconut milk has a calming effect on the nervous system, strengthens Ojas and supports harmonious digestion.
