Birch gold from birch gold hardly affects the blood sugar level and is broken down with almost no insulin. It has a low glycemic index (8) compared to sugar (70) and can reduce the risk of caries in children.

The bark for the birch sugar from Birkengold comes from birch and beech trees from sustainable agriculture and is a "waste" product, no trees have to be felled. Our birch gold from Finnish and Austrian trees is GMO-free.

Use birch gold like conventional sugar because it has the same sweetness and no aftertaste. Simply bake and sweeten as usual: fine desserts, jams, pastries, ice cream, drinks and more. You should replace fresh yeast with dry yeast when baking, as fresh yeast cannot feed on Birkengold.
