The plant from which asafoetida is obtained is called asafetida or devil's dung and grows in an area that stretches from Iran via Afghanistan and Russia to western Pakistan. Asafoetida grows up to three metres high and belongs to the umbelliferae family (like caraway, for example). Asafoetida resin is extracted from the milky sap of the thick taproot. To do this, the root is scratched, the sap is collected over several months and dried in the sun. One plant can yield up to 1 kg of resin during one harvest.

Asafoetida is added sparingly when cooking dal and curry dishes, sauces and soups in order to increase the digestibility and flavour of the food according to Ayurveda. It is also used as a substitute for onions and garlic. It is also an ingredient in Worcestershire sauce.
