Asafoetida is a gum-like, sulphurous-smelling resin from a plant native to Pakistan. Asafoetida is added sparingly during cooking to enhance the flavor of dishes.
According to Ayurveda, Asafoetida enlivens Agni*, is warming, sharp and bitter in taste, and balances Dosha* (reducing Vata-Kapha).

Usage
Asafoetida is added sparingly when cooking dal and curry dishes, sauces and soups to increase digestibility and enhance the flavor of food according to Ayurveda. It is also used as a substitute for onions and garlic. Incidentally, it is also an ingredient in Worcestershire sauce.
