Our Bio Kitchari Green combines fine basmati rice, protein-rich mung dal, and a colorful variety of vegetables such as carrot, zucchini, leek, parsnip, and tomato. Rounded out with aromatic spices like turmeric, fennel, and ginger, it creates a harmonious meal that is easy to digest and wonderfully satisfying. Perfect for gentle cleansing or as a balanced everyday meal.
Preparation
Per serving, bring 1/2 cup (60g) kitchari to a boil with 1 cup (120ml) water. Simmer covered over low heat for approximately 15 minutes. Stir regularly. If desired, stir in asafoetida and ghee at the end of cooking time and season with salt.
Tip: For a delicious dal, simply add finely chopped vegetables of your choice and cook together for about 10 minutes.
