NATURATA Maple Syrup comes from cultivation projects in the Canadian province of Quebec, which is the main production area for maple syrup worldwide. The maple syrup for NATURATA is sourced exclusively from farmers who operate according to the guidelines of controlled organic farming. Accordingly, the use of pesticides, synthetic fertilizers, and chemicals in the extraction of maple sap is avoided.
Among the many species of maple, the sugar maple is primarily important for the extraction of maple sap. The harvesting season for maple sap is limited to the period from late February to mid-April. When the temperatures shift from permanent frost to night frost and the daytime temperature rises above 0°C, the sugary sap of the maple tree begins to flow, supplying nutrients for bud formation.
During the harvest, the sap becomes darker and increasingly robust in flavor. These natural changes in the sap later result in the gradings of maple syrup. The brightness or light transmittance of the maple syrup, which depends on the time of harvest, is regarded as a quality feature and a taste criterion. The grading is conducted in Canada by governmental inspectors using a spectrophotometer. NATURATA maple syrup from controlled organic farming is available as Grade A and Grade C.
Production
The maple sap flows via tubing directly into the processing sugar house. This raw sap is passed through a multi-stage evaporation system, consisting of large, sequential stainless steel pans. The maple syrup is gently heated to a temperature of about 100°C. At this temperature, the desired consistency with a water content of about 33% is achieved. Afterwards, the syrup is filtered, filled into barrels at a temperature above 80°C, and immediately sealed. In the closed vessel, the syrup cools further, creating a natural vacuum that serves for preservation. During bottling, the syrup is reheated again to a temperature of about 90°C for microbiological reasons.
Usage
The mineral content is not dependent on the grading but on the soil composition of the harvesting area (the darker C-grade does not have a higher mineral content). Due to its high sugar content, maple syrup is not suitable for meeting mineral needs!
Maple syrup is suitable for lightly sweetening dishes of all kinds. Drizzled on fresh waffles or pancakes, maple syrup is a delicacy.
