The base ingredients are intensively mixed and reduced to a fine consistency using rollers. This chocolate mass is conched (stirring process) at 60°C, with additional cocoa butter and individual components (e.g., nuts) added. The mass is then cooled to approximately 30°, slightly tempered once more and then poured into chocolate molds.
