The wonderfully aromatic flavour, firm flesh, and the multi-faceted nuances of colour is characterised by the olive cultivar 'Kalamata'. Depending on the time of harvest and Reifeort the intensity of the colour is different. The spectrum ranges from dark pink to purple, brown to deep black. Nature-ripened olives are lovingly cultivated by small family farms in the mountainous region of the southern Peloponnese (Greece) and harvested by Hand.

The Kalamata olives are ideal for salads as Antipasti, or as a Tapa with the wine served as well for pasta dishes and sauces, as a pizza topping or for baking bread.
The Kalamata olives are harvested in Greece by Hand. Harvesting, fresh olives are very bitter and inedible. Therefore, the olive store for the debittering of several months in large barrels, loaded in water and sea salt. The debittering phase lasts in dark olive for longer than green. They are then filled with a brine of water, wine vinegar, and sea salt in glasses. In order to preserve the olives are heated.
