Za'atar, also known as zatar or satar, is an Arabic spice mix of herbs and roasted spices with thyme (hence the name - za'atar is Arabic for thyme). The added spices - roasted sesame seeds, salt and the sour sumac give the thyme the right kick.
Herbaceous - spicy, full-bodied flavour.
