Details
NATURATA maple syrup comes from cultivation projects in the Canadian province of Quebec, the main growing area for maple syrup worldwide. The maple syrup for NATURATA is obtained exclusively from farmers who work according to the guidelines of controlled organic cultivation. Accordingly, the use of pesticides, synthetic fertilizers and the use of chemicals in the extraction of maple sap are avoided.
Among the many types of maple, the sugar maple is particularly important for the extraction of maple sap. The harvest time for the maple sap is limited to the period from late February to mid-April. When the temperatures change from permafrost to night frost and the daytime temperature rises above 0 ° C, the sugary sap of the maple tree begins to flow to supply the tree with nutrients for budding.
As the harvest progresses, the juice becomes darker and has an ever stronger taste. The gradations of the maple syrup result from these natural changes in the sap. As a quality feature and as a taste criterion for the maple syrup is its brightness or light transmission, which depends on the harvest time. Graduation is carried out in Canada by state inspectors using a spectrophotometer. NATURATA maple syrup from certified organic cultivation is available as grade A and grade C.
Manufacturing
The maple sap flows through hose lines directly into the sugar refinery for further processing. This raw juice is passed through a multi-stage evaporation system, which consists of large stainless steel pans lined up one behind the other. The maple syrup is gently brought to a temperature of approx. 100 ° C. At this temperature, the desired consistency is achieved with a water content of approx. 33%. The syrup is then filtered, then filled into barrels at a temperature of over 80 ° C and immediately sealed. The syrup cools down further in the closed vessel, creating a natural vacuum, which is used for preservation. For microbiological reasons, the syrup is heated again to a temperature of approx. 90 ° C when bottling.

The mineral content does not depend on the graduation, but on the nature of the soil in the harvest area (the darker C grade does not have a higher mineral content). Due to its high sugar content, maple syrup is not suitable for covering mineral requirements!
Maple syrup is suitable for sparingly sweetening all kinds of dishes. Maple syrup is a delicacy when dripped onto fresh waffles or pancakes.
