Ripe organic raspberries give Byodo raspberry vinegar its intensely berry-like flavor and beautiful, bright red color. These are processed into fine raspberry wine and raspberry concentrate. The wine is then slowly fermented into vinegar at pleasantly warm temperatures. This process is called continuous fermentation.
The finished vinegar is flavored with raspberry concentrate and then filtered before being bottled.

Like all Byodo vinegars, it is completely natural and neither heated nor sulfured. This ensures that valuable enzymes and flavor compounds are deliciously preserved. Cloudiness or sediment at the bottom of the bottle, as well as any possible flakes, do not indicate a loss of quality. Quite the opposite! They are a sign of the natural production method of this organic product. These so-called "mothers of vinegar" can simply be strained out, and the vinegar can then be used as normal.

With its intensely berry-like, fresh flavor, Byodo raspberry vinegar tastes delicious with fresh leafy salads such as chicory and lamb's lettuce. This fine organic raspberry vinegar is also excellent for refining game and lamb dishes, as well as for preparing chutneys and sweet and sour fruit preserves.

Recipe: Raspberry-Honey Dressing

• 4 tbsp Byodo raspberry vinegar
• 1 tsp honey
• 1 shallot
• 6 tablespoons Byodo virgin almond oil
• Byodo Atlantic Sea Salt
• pepper
• Herbs as desired

Preparation:

Thoroughly mix the raspberry vinegar and honey, finely dice the shallot and stir it in along with the oil. Finally, season the dressing with salt, pepper, and fresh herbs, and pour it over your favorite salad just before serving.
