Our organic Kitchari Green combines fine basmati rice, protein-rich mung dal and a colourful variety of vegetables such as carrot, courgette, leek, parsnip and tomato. Rounded off with aromatic spices such as turmeric, fennel and ginger, the result is a harmonious meal that is both easily digestible and satisfyingly filling. Perfect for a gentle cleanse or as a balanced everyday meal.
Preparation
Boil 1/2 cup (60g) of kitchari with 1 cup (120ml) of water per serving. Cover and simmer over a low heat for approx. 15 minutes. Stir regularly. Stir in asafoetida and ghee as required at the end of the cooking time and flavour with salt.
Tip: For a delicious dal, simply add chopped vegetables of your choice and simmer for approx. 10 mins.
