Description

The beans are particularly popular in Asian cuisine as sprouts for wok dishes. In India, the mung bean is a staple food. Among other things, it is used to make glass noodles and the famous mung dal.
Preparation
Wash the beans and soak in plenty of cold water for 1 - 2 hours. Then drain the water and rinse the beans. Bring 1 cup of mung beans to the boil once with about 3 cups of water and then simmer gently for about 30 minutes at a low temperature with the lid on. Only add salt after cooking.
