The plant from which Asafoetida is derived is called Asant or Devil's Dung and grows in an area that stretches from Iran through Afghanistan and Russia to western Pakistan. The asant grows up to three meters high and belongs to the umbelliferae family (such as caraway). The resin Asafoetida is obtained from the milky sap of the thick taproot. To do this, the root is scratched, the juice collected over several months and dried in the sun. One plant can yield up to 1kg of resin during one harvest.
Asafoetida is added sparingly when cooking dal and curry dishes, sauces and soups to increase the digestibility and taste of the food according to Ayurveda. It is also used as a substitute for onions and garlic. Incidentally, it is also part of the Worcestershire sauce.
