The Chardonnay is a white noble grape variety that is also known as Beaunois, Morillon or Weisser Clevner in cultivation. Chardonnay is genetically related to the Burgundy varieties, Chardonnay was the result of a natural cross between Pinot and Gouais Blanc (Heunisch). Chardonnay has a harmonious sugar-acid ratio and a particularly fine aroma. The grapes from biodynamic cultivation are pressed into grape juice and the juice is pressed without the addition of sulfur. The resulting wine is then fermented using an organic process to produce spicy, aromatic wine vinegar. When filling, the fine wine vinegar is not pasteurized by heating in order to protect the ingredients.
Wine vinegar is suitable as:
• Seasoning for dressing for salads, for sauces and fruity hot chutneys
• Preservatives for food such as marinades, aspic, mustard and ketchup
Without the addition of concentrate and sulfur.
